
Ingredients:
1 lb boneless, skinless chicken thighs, sliced
1 Tbsp olive oil
salt and pepper to taste
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup salsa
1/2 cup barbecue sauce
2 Tbsp liquid honey
1 tsp chili powder
1 tsp cumin
1/2 cup Mozzarella cheese, grated
Preparation:
1. Preheat oven to 350°F (180°C).
2. Heat oil in a skillet over medium high heat; brown chicken thighs. Season with salt and pepper.
3. Transfer chicken to a casserole dish and sprinkle onion and green pepper over top. Combine salsa, barbecue sauce, honey, chili powder and cumin; pour over chicken. Top with grated cheese. Bake for 30 minutes.
