If you don’t have a vegetarian burger recipe in your grill repertoire, these healthy burgers are a guaranteed crowd pleaser.
8 oz cremini mushrooms, wiped clean
1 tbsp vegetable oil
2 tsp each balsamic vinegar and Dijon mustard
1/2 cup finely diced onions
1 tsp dried oregano
1 clove minced garlic
1 (19 oz) can white kidney beans, drained and well mashed
1/2 cup rolled oats (not instant)
1/4 cup pine nuts, finely chopped
1/4 cup each chopped roasted red pepper and chopped fresh parsley
1/2 tsp salt
1/4 tsp pepper
Preheat grill to medium.
Toss mushrooms with oil, vinegar and mustard. Place mushrooms on grill and grill for about 15 minutes turning occasionally until tender.
Remove from grill, cool slightly and finely chop. Using your hands, combine chopped mushrooms, onions, oregano, garlic, mashed beans, oats, pine nuts, roasted red peppers, parsley, salt and pepper.
Form mixture into 4 even patties, about 170g each. Place patties on well greased grill and grill on medium heat for about 5 minutes.
Using a thin grilling spatula, carefully turn patties over and grill for an additional 5 minutes.
Serve on whole grain buns with garnishes of your choice.
