Grilled Zucchini Bundt Cake

Utilizing the barbecue for dessert is often overlooked. Grilling the zucchini in this recipe adds a depth of flavour making a great alternative to pumpkin pie.

Ingredients:

3 medium zucchinis, about 1 lb
2 tbsp melted butter
1/4 cup brown sugar, divided
1/2 tsp ground cinnamon
1 cup granulated sugar
3 eggs
3/4 cup vegetable oil
1 tbsp vanilla extract
1 tbsp each grated fresh gingerroot and finely grated orange zest
2 1/4 cups flour
2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 oz melted semi-sweet chocolate chips

Method:

Preheat grill to medium.

Slice each zucchini in half lengthwise and toss with melted butter, 1 tbsp (15 mL) of brown sugar and cinnamon.

Place zucchini on well-greased grill and cook for about 20 minutes, turning occasionally.

Remove zucchini from grill and cool.

Cut zucchini into chunks and place in food processor fitted with a metal blade, along with remaining brown sugar. Pulse until very finely chopped. Set aside.

Preheat oven to 350° F (180° C).

Beat together sugar and eggs.

Beat in oil, vanilla, gingerroot and orange zest until well combined.

In a separate bowl stir together flour, baking soda, baking powder and salt.

Stir dry ingredients into wet until well combined.

Fold in zucchini until very well combined.

Pour batter in a lightly greased 10-inch bundt pan and bake for 40 to 45 minutes or until cake tester comes out clean.

Remove from oven and cool.

Drizzle melted chocolate evenly over cake.

Makes 16 servings.

Be sure your grill is very well cleaned before you start this recipe. Last night's dinner is not an ingredient in this cake.

Stir together 3 tbsp (45 mL) icing sugar with 2 tsp (10 mL) orange juice and drizzle over cake in place of drizzled melted chocolate
